LORD HOWE ISLAND KING FISH PIE
8 heaped tablespoons margarine
8 heaped tablespoons plain flour
1/2 teaspoon salt
2 cups grated cheese
8 cups milk
1 kg cooked Lord Howe Island Kingfish
6 sheets puff pastry
Cheese sauce method
Melt margarine in large pot
Add flour and stir over low heat with a whisk until blended into a paste.
Add milk and salt and stir with whisk until the sauce thickens
Add cheese and stir until cheese has melted.
Allow to cool
Put fish into a large bowl and add the cheese sauce until mixed well.
Grease pie dishes and spoon mixture in each to ¾ full
Cut puff pastry sheets in ½ and cover each pie dish with the pastry. Pinch the edges to the dish
Bake 180 degrees Celsius on middle shelf for 25-30 minutes until pastry is golden brown.
LORD HOWE ISLAND BANANA CREAM PIE
Line a baking dish with shortcrust pastry and leave to stand while preparing the filling.
4-6 ripe bananas
1 tablespoon sugar
2 cups cream
Juice of ½ an orange
Beat eggs, vanilla and sugar. Stir in cream and orange juice. Peel and slice bananas and place on the pastry base. Pour cream mixture over to cover the bananas. Bake 250 degrees Celsius for 5-7 minutes then reduce heat to 200 degrees Celsius. Bake for 45 minutes until set.
